Understanding Digestion - Enzymes

The human body makes approximately 22 different digestive enzymes, capable of digesting protein, carbohydrates (complex sugars), sugars, and fats. We digest food in stages and specific enzymes break down different types of food. A protein-digesting enzyme cannot act on a carbohydrate and vice-versa. Enzymes are turned on and off by the environmental pH level. This is how particular enzymes are activated on at the appropriate stage during digestion.
